About This Process

The Honey Process bridges Natural and Washed methods. After depulping, the sticky mucilage layer — rich in sugars — remains on the bean during drying. The result is a balanced cup with caramel sweetness, medium body, and stone fruit notes. We offer Yellow, Red, and Black Honey variants depending on mucilage retention.
