How We Process Coffee Beans
Sorting Process
After the coffee cherries are harvested, the journey to a perfect cup begins with the crucial sorting process. The first step involves removing any unripe or overripe cherries, leaves, and other debris. This is often done using a combination of machinery and manual labor. Large-scale operations may use density-based sorting machines, where cherries are submerged in water; the good, dense cherries sink, while the lighter, defective ones float and are skimmed off. This initial culling is vital as it ensures that only the highest quality cherries continue to the next stages of processing.
Following the initial sorting, the beans are further refined through a meticulous grading process. This stage categorizes the beans based on size, density, and color, which are key indicators of quality and flavor potential. Advanced optical sorters use high-resolution cameras to detect and remove any discolored or damaged beans that may have been missed by earlier methods. For specialty coffee, hand-sorting is a common practice, where skilled workers meticulously inspect each bean to ensure uniformity and perfection. This multi-layered sorting and grading process is what guarantees a consistent, high-quality final product, setting the foundation for the rich and complex flavors that Arthastar’s customers have come to love.


Drying Process
After the initial sorting, the next critical step in processing is the drying of the coffee beans. The natural sun-drying process is a time-honored tradition that plays a significant role in developing the unique flavor profile of our coffee. After the cherries are carefully harvested, they are spread out in a thin, even layer on raised drying beds. These beds, often elevated to allow for better air circulation, are the ideal stage for the beans to slowly and evenly dehydrate under the warmth of the sun. The cherries are meticulously and regularly raked by hand to ensure that every bean receives equal exposure to the sun and air, preventing any risk of mold or uneven drying.
This slow, gentle dehydration allows the sugars from the coffee cherry’s fruit and mucilage to be absorbed into the coffee bean itself, which is what imparts a distinctive sweetness and complex, fruity notes to the final cup. The duration of this process varies depending on the climate, humidity, and the desired moisture level, but it is a painstaking effort that ensures each bean reaches its optimal state. By relying on this traditional, natural method, we are able to capture the authentic, vibrant flavors of the coffee’s origin, resulting in a rich, full-bodied, and truly memorable coffee experience.

Robusta Bean
Characterised by its robust nature, often described as earthy and strong.
It possesses a higher bitterness and lower acidity compared to Arabica. It can exhibit notes of dark chocolate, nuts, and even hints of grain-like or woody flavours. Robusta is commonly used in espresso blends due to its ability to produce a rich crema.

Arabica Bean
Known for their delicate and nuanced notes, offering a wide range of taste experiences.
The taste can vary depending on factors such as the region, soil composition, climate, and processing methods. Common characteristics include hints of fruitiness like berries or citrus, floral undertones, and aftertastes of chocolate, caramel, or nuts.

Excelsa Bean
Often described as complex and multidimensional. It can exhibit a wide range of taste notes, including fruity, tart, and even dark and smoky flavours.
Excelsa is known for providing a distinct and adventurous sensory experience, making it an intriguing option for coffee enthusiasts.
